Eat Real America Presents Sweet Surprise Corn Salad

Chef Krista Sanderson's recipe as seen on Good Morning KAKEland on June 28th: 

Sweet Surprise Corn Salad


1 1/2 cups corn (or cut fresh from 4 ears of corn)

1 cup blueberries

1 cucumber (diced)

1 small red onion (chopped)

1/4 cup fresh cilantro (chopped)

1 jalapeno (seeds removed and finely diced)

Honey Lime Dressing:

2 Tbsp lime juice

2 Tbsp olive oil

1 Tbsp honey

1/2 tsp ground cumin

1/2 tsp sea salt

1/4 tsp black pepper


1. Steam corn on the cob for 3-5 minutes, or if using frozen corn, rinse under cool water to thaw.   (Cut corn off the cob when cool enough to handle.)  Add to large bowl.

2. Add all other ingredients (except dressing) to large bowl with the corn.

3. Add dressing ingredients to small bowl or mason jar and stir or shake to combine.

4. Pour dressing over salad and stir to combine. 

5. Serve and enjoy!
