Bison Chili

2 small yellow onions, diced

1 bell pepper, diced

2 lbs of ground bison

1 tbsp oregano

1 tbsp cayenne

1 tbsp cinnamon

1 tbsp garlic salt

1 tbsp onion powder

3 tbsp chili powder

2 tbsp taco seasoning

1 tbsp cumin

1/3 cup brown sugar

1 #10  can crushed tomatoes

1 #10  can black beans, drained

1 #10 can chili beans

3 qts beef stock

2 tbsp worcestershire

2 tbsp Franks hot sauce

6 potatoes, peeled and diced

1 cup chopped parsley

1 cup stout beer

In a large sauce pot, sweat onions and peppers for five minutes, then add bison and brown. 

Add remaining ingredients except parsley and simmer until potatoes are tender.

Once potatoes are done, add parsley and cool.
