| Watermelon Summer Salad |
| Ingredients Needed: 3/4 cup red onion, halved and thinly sliced 1 tablespoon fresh lime juice 6 cups seeded watermelon balls 3/4 cup feta cheese, crumbled 1/2 cup Lindsay Naturals Green Ripe Olives 1/2 cup LIndsay Naturals Black Ripe Olives 1/2 cup fresh mint, chopped 2 tablespoons olive oil |
| Directions: 1. Place onion slices in a small bowl with the lime juice. The acid of the limes will mellow the flavor of the raw onion. Let stand for 30 minutes. 2. Drain the watermelon balls in a colander. 3. In a large bowl, combine onions in the lime juice with the watermelon balls, feta cheese, Lindsay naturals green and black olives, and mint. 4.
