"Cooking with KAKE" - Recipe of the Week

Ingredients:
Dry Ingredients
- 1/2 Cup Cinnamon
- 2 1/2 Cups Flour
- 1 1/2 Cups Sugar
- 2 Teaspoons Baking Powder
- 1 Teaspoon Soda
- 1 Teaspoon Salt
- 1 Teaspoon Citric Acid
Wet Ingredients
- 3 Eggs
- 3/4 Cup Shortening
- 1/2 Cup Elderberry Semi-Dry Wine
- 2 Cups Elderberries
- 3 Teaspoons Vanilla
- 1/2 Cup Lemon Juice
- Zest of 1 Lemon - Grated

Directions:
- Blend dry ingredients in a bowl, and wet ingredients in a separate bowl.
- Add together and mix well. (Optional - chopped walnuts are also great in these!)
- Grease mini-muffin pans with shortening or spray with cooking spray.
- Spoon mixture into muffin pans - filling 3/4 full.
- Convection Oven - Bake at 350 Degrees for 15-18 minutes.
- Conventional Oven - Bake at 375 Degrees for 20-25 minutes.
Makes 4 Dozen Mini-Muffins. Serve warm, with coffee, tea or Wyldewood Cellars Spiced Wine for a delicious treat!
