Pat & Pearl's Elderberry Muffins - September 22, 2006

"Cooking with KAKE" - Recipe of the Week
Ingredients:
Dry Ingredients

  • 1/2 Cup Cinnamon

  • 2 1/2 Cups Flour

  • 1 1/2 Cups Sugar

  • 2 Teaspoons Baking Powder
  • 1 Teaspoon Soda

  • 1 Teaspoon Salt

  • 1 Teaspoon Citric Acid


Wet Ingredients

  • 3 Eggs

  • 3/4 Cup Shortening

  • 1/2 Cup Elderberry Semi-Dry Wine

  • 2 Cups Elderberries

  • 3 Teaspoons Vanilla

  • 1/2 Cup Lemon Juice

  • Zest of 1 Lemon - Grated


Directions:

  1. Blend dry ingredients in a bowl, and wet ingredients in a separate bowl.

  2. Add together and mix well. (Optional - chopped walnuts are also great in these!)

  3. Grease mini-muffin pans with shortening or spray with cooking spray.

  4. Spoon mixture into muffin pans - filling 3/4 full.

  5. Convection Oven - Bake at 350 Degrees for 15-18 minutes.

  6. Conventional Oven - Bake at 375 Degrees for 20-25 minutes.



Makes 4 Dozen Mini-Muffins. Serve warm, with coffee, tea or Wyldewood Cellars Spiced Wine for a delicious treat!
