Veal Marsala - April 16, 2004

"Cooking with KAKE" - Recipe of the Week
Ingredients:


  • 8 - 2 oz. Veal Leg Slices
  • 4 oz. Olive Oil
  • 1/2 Cup Sweet Marsala Wine
  • 1 Fresh Green Pepper (sliced and par boiled)
  • 1 Cup Fresh Sliced Mushrooms
  • 8 oz. Beef Stock
  • 1/2 Stick Lightly Salted Butter
  • 1/2 Cup Flour
  • Salt and Pepper to taste
Directions:

  1. Pound veal gently, thin.
  2. Dip in flour.
  3. Saute' in olive oil, then set aside on paper towels to absorb excess oil.
  4. In sauce pan, combine beef stock, wine, and butter that has been turned into rue with flour.
  5. Add mushrooms and peppers.
  6. Place veal on plate and top with sauce.



Serves two.
