Scallop and Shrimp Saute'

"Cooking with KAKE" - Recipe of the Week February 27, 2004
Ingredients:


  • 12 each Jumbo sea scallops

  • 12 each Jumbo shrimp

  • 6 TBS. butter

  • 1/2 tea. salt

  • 1/2 tea. black pepper

  • 2 tea. dill

  • 2 TBS. diced roasted red pepper

  • 1 TBS. Capers

  • 2 TBS. lemon juice

  • 3-1/4 Cup Chardonnay wine


Directions:

  1. Place 2-TBS. butten in a saute' pan, allow to melt on low heat.

  2. Add shrimp, scallops, salt, pepper, and dill.

  3. Bring heat up and satue' for 3 minutes until shrimp are beginning to turn reddish orange.

  4. Add capers and red peppers and continue to satue' for 1 minute on high.

  5. Next add lemon and wine.

  6. Let this cook on high for 1 minute

  7. Last add remaining butter; reduce heat until butter fully melts, shaking pan well, this will thicken sauce.

  8. Serve over rice or pasta.
