Garlic Mashed Potatoes - December 8, 2006

"Cooking with KAKE" - Recipe of the Week
Ingredients:

  • 5 Lbs. Baby Red Potatoes

  • 1 1/2 Sticks of Butter

  • 3/4 Cup Half & Half

  • 1 Teaspoon Ground White Pepper

  • 1 Teaspoon Black Pepper, course ground

  • 2 Tablespoons Garlic Powder

Directions:

  1. Place the potatoes in a pot and cover with water.

  2. Bring to a boil until fork tender.

  3. Drain well.

  4. While the potatoes are cooking, bring the Half & Half and butter to a simmer in a saucepan. Remove from heat and hold warm.

  5. Combine the dry spices in a small container and set aside.

  6. Place the potatoes (with the skins on) in your mixer using the paddle attachment.

  7. Blend on low speed for 1 minute.

  8. Add the spices and continue mixing.

  9. Gradually add the Half & Half and butter mixture until all mixed in.

  10. Do not whip at a high speed or the potatoes will become too stiff.
