Mexican Meatloaf - November 17, 2006

Carlos O'Kelly's
"Cooking with KAKE" - Recipe of the Week
Ingredients:

  • 1 Lb. of Ground Beef

  • 3/4 Cup Cracker Crumbs or Bread Crumbs

  • 1 Egg, lightly beaten

  • 3/4 Cup Carlos O'Kelly's Salsa

  • 1/2 Teaspoon Salt

  • 1/2 Teaspoon of Leaf Oregano, rubbed

  • 1/4 Teaspoon of Cumin

  • 1/4 Teaspoon of Granulated Garlic or Garlic Powder

  • 1/2 Teaspoon of Black Pepper

  • 1/2 Teaspoon of Crushed Red Pepper (optional)

Directions:

  1. Mix spices together and set aside.

  2. In a large bowl, combine ground beef, 3/4 cup of Carlos O'Kelly's Salsa, egg and crumbs.

  3. Add spices and mix thoroughly and shape into a loaf.


Sauce

  • 1 Cup of Carlos O'Kelly's Salsa

  • 1 Teaspoon of Corn Starch



  1. In a sauce pan, combine 1 cup of salsa and corn starch.

  2. Bring to a boil over medium heat.

  3. Reduce heat and simmer 3 to 5 minutes, stirring occasionally.

  4. Spread over meatloaf and bake uncovered in a casserole dish or loaf pan at 350 degrees for 50 to 60 minutes or until internal temperature reaches at least 165 degrees.
