Grilled Mahi Mahi with Citrus Butter - November 10, 2006

Ingredients:
Citrus Butter

  • 1 Teaspoon Grated Orange Zest

  • 3 Tablespoons Orange Juice

  • 1 Teaspoon Grated Lemon Zest

  • 1 Teaspoon Lemon Juice

  • 1 Teaspoon Lime Zest

  • 1 Teaspoon Lime Juice

  • 3 Tablespoons Minced Fresh Parsley

  • 1/4 Pound Butter, Softened

  • 1/4 Teaspoon Salt

  • 1/4 Teaspoon Black Pepper

Directions:

  1. Mix all ingredients in a small bowl.

  2. Transfer to a sheet of parchment paper and shape butter mixture in a 6-inch by 1-inch log.

  3. Wrap and freeze until the butter is firm, about 30 minutes. (Can be frozen up to 2 months).


Grilled Mahi Mahi

  • 6-8 Oz. Portion of Mahi Mahi

  • 1/2 Ounce Vegetable Oil

  • 1 Teaspoon Montreal Seasoning



  1. Brush vegetable oil on both sides of the fish.

  2. Sprinkle on the Montreal seasoning.

  3. Place fish on hot grill and cook until done.

  4. place a 1-inch piece of Citrus Butter on the Mahi and serve.
