Lime Cranberry Cooler Bars - October 31, 2006

1st Place, Eagle Brand Cookie Bar Bonanza, Kansas State Fair
Ingredients:

  • 1 Cup Flour

  • 1 Cup Quick Oats

  • 1 Pinch Salt

  • 7 Tablespoons Butter (softened)

  • 1 14 Oz. Can Eagle Brand Sweetened Condensed Milk

  • 5 Tablespoons Bottled Lime Juice

  • 2-3 Drops Green Food Coloring

  • 1 Cup Dried Cranberries

  • 1 Square White Chocolate (melted)


Directions:

  1. Mix flour, oats and salt, cut in butter until it resembles course crumbs.

  2. Take 2/3 cup of the crust mixture out to save for the top. Press the rest in a 9 X 13 inch glass baking dish.

  3. Bake at 325 degrees for 10 minutes.

  4. Mix Eagle Brand Sweetened Condensed Milk, lime juice and green food coloring.

  5. Pour over the crust and top with dried cranberries.

  6. Sprinkle the rest of the crust mixture over the bars.

  7. Bake for 25 minutes at 325 degrees.

  8. After the bars are cool, lightly drizzle the white chocolate over the top of the bars.

  9. Let the chocolate set, cut, serve and enjoy!
