White Chili Soup - October 27, 2006

Carlos O'Kelly's
"Cooking with KAKE" - Recipe of the Week
Ingredients:

  • 2 Lbs. Great Northern White Beans, Dried

  • 2 1/2 Lbs. Carlos O'Kelly's Spiced Chicken

  • 1 Lb. Diced Green Chilies

  • 1 Tablespoon Granulated Garlic

  • 4 Cups Diced Onions

  • 1 Tablespoon Cumin

  • 1 Tablespoon Leaf Oregano

  • 1/4 Cup Vegetable Oil

  • 1/2 Teaspoon Crushed Red Chilies

  • 1 Gallon Chicken Broth

  • 1 Teaspoon Lawry's Seasoning Salt

  • 2 Teaspoons Black Pepper

  • 2 Tablespoons Fresh Cilantro Diced

Directions:

  1. Place Chicken Broth and Beans in a 11 1/2 quart pan.

  2. Bring to boil on high heat for 15 minutes.

  3. Skim off foam from surface.

  4. In separate pan, saute onions, oil, garlic and chilies until the onions are soft.

  5. Add sauteed vegetables to beans.

  6. Simmer 2 hours. Timer!

  7. Cut stems off fresh cilantro and dice the leaves.

  8. Add remaining spices, chicken, and cilantro to beans.

  9. Simmer for 30 minutes, or until beans are done.
