Baby Back BBQ Ribs - October 13, 2006

Ingredients:
- 4 Racks Pork Baby Back Ribs
- 10 Ozs. Rib Rub (your choice)
- 16 Ozs. Big Rick's BBQ Sauce
- 1 Large Yellow Onion
- 2 Tbsp. Vegetable Oil
- 2 Cups Water (depends on roasting pan depth).
- 1/4 Cup Liquid Smoke
Preparation
- The first step is to peel the skin off the backside of the ribs. Insert a paring knife under the skin, starting with the smallest bone.
- Work skin loose and using a towel to help grasp the skin, peel the skin down the length of the ribs.
- Lightly coat both sides of the ribs with rib rub.
- Cover and refrigerate until the ribs are ready to be seared off.

Directions:
Sear and Cook Ribs
- Heat oven to 325 degrees.
- Take your yellow onion and cut into quarters and then in halves. (Using the whole onion including skin.)
- Place cut onions and oil in a roasting pan. You need a roasting pan that is large enough to have a grate placed inside of it. The grate needs to have legs to sit above the onion and liquid mixture.
- Roast onions for about 15 minutes or until golden.
- While the onions are roasting, take your ribs and sear on a grill.
- Start with the concave side down, sear the ribs until marked and well colored.
- Turn the ribs over and brush with Big Rick's BBQ Sauce.
- Continue searing until the underside is browned off as well.
- Remove from grill and arrange ribs on grate. It is okay to stack ribs in layers of 2.
- Combine the water and liquid smoke and pour into the roasting pan that contains the cooked onion.
- Cover with foil.
- Cook for 2 hours.
NOTE:The cook time is approximate and will depend on the oven. roast until the bones pull apart very easily, but not until the meat is falling off of the bone.
- You now have two choices. You can take the hot ribs and place them on place them on a hot grill to finish. While on the grill, brush a liberal amount of Big Rick's BBQ Sauce on them and serve immediately.
- You can take roasted ribs and cool them in the refrigerator until ready to serve. Follow the same process by putting the cold ribs on the grill. As they are heating, brush Big Rick's BBQ Sauce on the ribs. Serve when hot.
