Mississippi Delta Shrimp and Ham Cream Sauce - August 12, 2005

Ingredients:

  • 1/4 Cup Butter

  • 2 Tbs. Minced Garlic

  • 2 Cups Ham (cut like matchsticks)-thin

  • 2 Cups Fresh peeled and deveined 31-40 count Shrimp-tail off

  • 1 1/2 Cups Diced (very small Red Onion

  • 2 Cups Chardonnay (reduced to 1/2)

  • 4 Cups Prepared White Sauce

  • 2 Tea. Black Pepper

  • 2 Tea. Salt

  • 1/2 Cup Lemon Juice

  • 2 Tea. Red Beans Cajun Seasoning

Directions:

  1. Place butter in saute pan and get to a low simmer.

  2. Add garlic, and red onions. Simmer for 5-10 minutes until onion and garlic slightly soften.

  3. Next add reduced wine, ham and shrimp. Simmer until shrimp pinks.

  4. Add pre-made white sauce and blend together until a slow simmer begins. Add lemon juice, salt and pepper. Simmer all for only 5 minutes.

  5. Very important to taste for seasoning and adjust as needed-this sauce should be gentle to your pallet and creamy and smooth. The garlic and lemon should pop together, the blacken mix should give it depth if it seems a little bland add salt and pepper.

    This recipe can be made ahead and heated on the stove before using. It is excellent on fish or any chicken.
