Chili Lime Sauce - July 8, 2005

Rick and Roger - Red Bean's Bayou Grill
"Cooking with KAKE" - Recipe of the Week
Ingredients:

  • 4 Cups water

  • 1 Cup Ancho base or 2 cups dried Ancho Chilies soaked in warm water, drained and pureed with salt and pepper in food processor

  • 1/4 Cup fresh lime juice

  • 1/4 Cup sugar

  • 1 TBS. salt

  • 1 tsp. black pepper


Slurry:

  • 2 TBS. water

  • 2 tsp. cornstarch


Directions:

  1. Place water in a sauce pan and bring to a simmer

  2. Add all ingredients except slurry and simmer for 10 minutes, whipping well.

  3. Turn off and slowly add slurry, whipping well as you add.

  4. Bring back to slow simmer for 5 minutes.
