The charcoal debate centers on carcinogenic risks of charcoal and whether or not it causes cancer. The American Cancer Society has published information pertaining to this very issue and it has been interpreted differently by many different proponents and opponents of charcoal.
Some have said that the coals are bad for you and others have said that the issue is the temperature at which you cook the meat.
According to the ACS, some research suggests grilling meats at very high temperatures creates chemicals that might increase cancer risk.
The bottom line: Moderation. All of the findings suggested that using charcoal every now and then is fine.
