1 medium green cabbage, shredded
2 English cucumbers, unpeeled, thinly sliced
1 large red onion, thinly sliced into rings
1 cup celery, diced
2 carrots, peeled, sliced in rounds
1 green bell pepper, seeded and diced
1/2 cup radishes, sliced in rounds
3/4 cup red wine vinegar
1/4 cup extra virgin olive oil
Salt and Pepper to taste
Combine all vegetables in a large bowl.
In a jar, mix remaining ingredients. Shake well.
Pour over vegetables and toss.
