1 large, fresh tomato, cut up
2 cups fresh watermelon, cubed
1 teaspoon red wine vinegar
1/4 cup extra virgin olive oil
2 tablespoons minced red onion
1/2 cucumber, seeded and minced
2 tablespoons minced dill, plus some for garnish
Salt and pepper
1/4 cup feta cheese
In a blender, puree the tomatoes, chili, annd 1/2 the watermelon. Pour in the wine vinegar and olive oil, then pulse.
Add the onion, cucumber, dill, and season wit h the salt and pepper. Puree until smooth.
Pour into chilled bowls and sprinkle with dill, feta, and the remaining watermelon.
