1 1/2 cups fresh, flat-leaf parsley, chopped
1 cup tahini
1 cup lemon juice
3 cloves garlic, chopped
1/2 cup cold water
Salt & Pepper to taste
Mix tahini, lemon juice and garlic in a blender.
Add parsley at low speed; do not over-blend.
Slowly add cold water until smooth, but not runny.
Add salt and pepper to taste.
Serve over fish, chicken or meat.
