Seared Scallops Over Avocado Cream
8 Diver Scallops (Sea)
2 Tablespoons of butter
1 Tablespoon of sugar
2 Avocados, peeled and seed removed
1/2 cup mayonnaise
1/2 cup cream cheese
1 Jalapeno seeded and chopped
2 Scallions, white and light green part only, chopped
Juice of one lime
Rinse and pat dry the scallops. Dip the cut ends in sugar. in an oven proof skillet, melt the butter and sear the scallops until the sugar has caramelized and they have a rich brown color on both ends. Place in the oven at 400 degrees. Preheat oven and roast until done (approx 10-12 minutes) DO NOT OVER COOK.
While the scallops are roasting, make the avocado dip.
Place all of the ingredients into a blender/ food processor for about a minute or until you have a smooth paste. Season with salt and pepper.
Place a spoonful on a plate and add the cooked scallop on top.
