Mediterranean Potato Salad
3 pounds white potatoes
1 cup fresh flat-leaf parsley, chopped
1/2 cup fresh mint, chopped or 1 tablespoon dried mint
1 large onion or 1 bunch geen onions, chopped
1/2 cup extra virgin olive oil
1/3 cup lemon juice
1 teaspoon salt
1/2 teaspoon ground black pepper
2 cloves garlic, minced
2/3 cup green olives with pimentos, chopped
Paprika to taste
Boil potatoes, cool and peel. Dice potatoes and place in a large bowl.
Add remaining ingredients except the olives and paprika, mix well.
Chill before serving.
Garnish with olives and paprika.
