Autumn Apple Salad with Creamy Maple Dressing
1/2 cup Canola Oil
1/4 cup maple syrup
1/4 cup low fat mayo
Salt and pepper to taste
2 TB white wine vinegar
1 TS Sugar
Mixed Greens (Romaine lettuce holds up very well
Sliced red apple with skin (Sprinkle on Sprite to keep from discoloring)
1/2 cup dried cranberries
1/2 cup toasted walnuts.
Dissolve the sugar in the vinegar and add the other ingredients whisking as you add each. You will get a creamy consistency when completely blended. You can keep in the refrigerator for over one week in a sealed container.
Toss Mixed Greens, adddress sing, and garnish with slices of apple, cranberries and walnuts.
