1-1/2 Cups Flour
2 Envelopes Fleischmann's Rapid Rise Yeast
2 Teaspoons Sugar
1/2 Teaspoon Salt
3/4 Cup Very Warm Water
3 Tablespoons Vegetable Oil
4 Strips of Bacon
2 Oz. Feta Cheese, Crumbled
1/2 Cup Diced Onion
1 Tablespoon Lemon Juice
1/2 Teaspoon Rosemary
15 Oz. Can Apricots, Sliced
Reserve Apricot Juice
Cook bacon until not quite crisp. Remove and drain.
In a greased 8-inch square pan, mix the ingredients for the batter until all flour is gathered. Spread evenly in pan. Let rest.
In 1 tablespoon bacon grease, cook the onion until clear. Dice cook bacon. Mix bacon, feta cheese, onion, lemon juice and rosemary. Spread bacon mixture over the top of the batter.
Arrange apricot slices over the top of batter in pinwheel pattern.
Place in cold oven. Set temperature to 350 degrees and bake for 30 minutes. While baking, simmer the apricot juice on reduced heat. Drizzle 3 tablespoons of reduced juice over apricots after 30 minutes. Return to oven and bake for another 5 minutes. Serve war or cold!
