12 ounces Egg Beaters
6 ounces heavy cream
12 ounces assorted vegetables
2 ounces margarine
2 frozen pie crusts
2 teaspoons salt & pepper blend
4 ounces mozzarella cheese
In a skillet, saute vegetables until cooked. Next, add the heavy cream and bring to a boil. Turn off the heat and add the egg beaters and whisk together.
Pour mixture into a partially cooked pie crust. Add the cheese and mix it in.
Cook in a pre-heated oven at 350 degrees for 25 minutes, or until quiche has set.
Remove from oven and allow to set for 10 minutes.
Cut quiche into 6 pieces and serve.
