Ingredients
1 pound ground beef
2 cups spaghetti sauce
1 cup grated cheese
12 corn or flour tortillas
1 can olives, chopped
sour cream
cumin powder
Directions
Brown and drain ground beef. Add spaghetti sauce until it is the same consistency as if you were making spaghetti. For spicy enchiladas, add 1 teaspoon cumin powder. Dip a tortilla in the sauce and place in baking dish. Spread on 1-2 teaspoons each of sourcream, olives and cheese. Next add 1 tablespoon of sauce mixture. Roll up the tortilla. Repeat this process until all tortillas are used. Spread remaining sauce over all the enchiladas then sprinkle with cheese. Cover and bake at 350 degrees F. for about 40 minutes OR microwave covered for 10 minutes. Serves 6
