Susan's French Toast Casserole

Ingredients

1 cup brown sugar
1/2 cup butter, melted
3 teaspoons cinnamon, divided
3 tart apples, peeled, thinly sliced
1/2 cup dried cranberries or raisins
1 loaf Italian or French bread, cut iinto 1 inch slices
6 eggs, large
1 1/2 cup milk
1 tablespoon vanilla extract

Directions

Combine sugar, butter and 1 teaspoon cinnamon in a 9 inch x 13 inch baking dish. Add apples and cranberries and toss to coat well; spread evenly over bottom of baking dish. Arrange bread slices on top. In a separate bowl mix eggs, milk, vanilla and 2 teaspoons cinnamon until well blended. Pour mixture over bread, soaking bread completely. Cover with foil and refrigerate 4 to 24 hours. Bake with foil cover for 40 minutes in 375 degree F. oven. Uncover and bake 5 minutes more. Remove from oven and let stand for 5 minutes. Serve warm. Drizzle with maple syrup.
