Apple Cinnamon Coffee Bread, David Miller, 1st Place, Kansas State Fair

Ingredients

Dough:
5 cups all-purpose flour
2 packages Fleischmann's Active Dry Yeast
1/2 cup sugar
1 1/2 teaspoon salt
1/2 cup butter, softened
1 1/2 cups warm water
2 eggs

Filling:
3/4 cup apples, dried
1 1/2 cup water
1/3 cup sugar
1/2 teaspoon cinnamon

Directions

Combine 2 cups flour, Fleischmann's Yeast, sugar and salt in large bowl and stir to blend. Add softened butter and warm water. Beat with electric mixer. Add eggs and 1 more cup of flour and beat until thick. Stir in just enough of the remaining flour with a wooden spoon to make a soft dough that leaves the sides of the bowl. Knead for 5 to 10 minutes and let rise for 20 minutes.

Simmer apples in water until tender. Mash fruit well with fork. Add sugar and cinnamon to fruit and stir to mix well. Cool.

Roll out half of the bread dough in a 9 x 14 inch rectangle. Cut dough into thirds and then place 2 tablespoons of apple mixture on each third of dough. Roll edges of dough over and pinch them together to make three rolls. Braid the rolls together and tuck the ends under.

Bake at 375 degrees F. for 25 to 30 minutes. When bread has completely cooled a confectioner's sugar frosting can be added.
