Ingredients
4 Sheets of Puffed Pastry, thawed
4 Apples
3 each Vanilla Beans or Vanilla Extract
1/2 cup granulated sugar
1 1/2 cup water
Directions
Lay out puff pastry on table to thaw. Cut vanilla beans lengthwise and place in a large saucepan. Add the water and sugar. Bring to a boil.
Peel the apples and remove the core using a core remover.
Place apples in sugar water and reduce heat to simmer for about 10 minutes or until slightly soft.
Heat oven to 350 degrees F. Roll out puff pastry thinly to about 1/8 inch. Place one apple in the middle of each puff pastry and carefully bring up the sides of the pastry to cover the apple completely. Place on a wax paper covered cookie sheet.
Bake for 25-30 minutes or until golden brown. Remove from the over and garnish with powdered sugar. Serve warm.
