Susan's Southwestern Bean Salad
1 can each Garbanzo, Kidney, and Black Beans (rinsed and drained)
2 Stalks of Celery (sliced)
1 Medium Red Onion, (diced)
1 or 2 small tomatoes, (diced)
1 Cup Frozen and Thawed Corn
I bunch of Cilantro (leaves chopped)
Combine all these ingredients in a large bowl.
3/4 cup thick, chunky salsa
1/4 cup vegtable oil
1/4 cup lime juice (Susan usually adds more)
1 tsp chilli powder (if you like it spicey)
1 tsp salt (optional)
1/2 tsp cumin (Susan adds more to taste)
Combine all dressing ingredients in small bowl. Pour over bean mixture. Cover and chill at least two hours.
