Susan Peters' Artichokes Au Gratin
A quick dish that's a family favorite.
Ingredients
3 (8 1/2 ounce) cans artichoke hearts
4 whole green onions chopped (white and green parts separated)
1 clove garlic , minced
1/4 cup butter
pepper to taste
3/4 teaspoon salt
1/4 teaspoon dry mustard
1/3 cup flour
1 & 1/2 cups milk
1 egg, slightly beaten
1 cup grated Swiss cheese
1 tablespoon bread crumbs
a few dashes of paprika
Directions
1. Drain artichoke hearts, reserving 1/2 cup liquid. Melt butter in saucepan and saute the white part of onion and garlic over medium heat for 4 to 5 minutes. Add salt and pepper, mustard, and flour and stir well. Add artichoke liquid and milk, stirring constantly. Cook and
stir constantly over medium heat until sauce is smooth and thickened. (about 5 to 7 minutes)
2. Remove from heat, add egg by stirring some hot mixture into egg, then adding egg to hot mixture along with half the Swiss cheese. Stir until well blended.
3. Place artichoke hearts in a single layer in a shallow 9 +13 inch greased baking dish. Cover with sauce. Combine remaining cheese, bread crumbs, chopped green part of onions , and paprika. Sprinkle over the top of the baking dish.
4. Bake at 450 degrees for 15 to 20 minutes.
