Ingredients
1 Quart wood chips of your choice
1/2 cup Kosher salt
1/2 cup sugar
2 cups water
1 teaspoon red pepper flakes
1 pound of Jumbo prawns, shells on
Charcoal
Directions
Soak the wood chips for at least 2 hours and then drain.
Meanwhile, dissolve salt and sugar in water in a large pot and add red pepper flakes.
Chill and place the shrimp in the brine for 45 minutes.
Get charcoal red hot and place in a large stainless steel bowl. Cover the charcoal with the drained wood chips and lay the shrimp on top, cover all with another smaller stainless steel bowl and smoke for 15 to 20 minutes.
Peel and serve with fresh lemon.
Makes a great appetizer.
