Sicilian Summer Orange Salad
This recipe is from Syracuse, Italy where citrus and olives are plentiful. You will find this salad served year round and is a Christmas holiday favorite as well.
5 large oranges
4 ribs of celery
40 cured green olives with pits
10 sweet pickles
Extra Virgin Olive Oil
Crush the olives but do not remove the pits.
Dice the celery.
Peel the oranges and cut each section in thirds.
Toss all the ingredients with sufficient oil to gently coat.
Can be prepared hours before serving and should be served at room temperature.
