1 (8 ounce) package feta cheese, crumbled
1 cup extra virgin olive oil
1/3 cup red wine vinegar
Place feta cheese in a food processor or blender. Slowly add oil and vinegar, alternating, until desired consistency. You can also blend together by hand in a bowl.
Can be used over any salad, steamed vegetables or as a marinate.
Makes 1 1/2 cups
