Crunchy Granola with Fruit

Ingredients

1 1/2 cups quick or old fashioned oatmeal
1 1/2 cups of soy protein graham cereal
1/2 cup vanilla flavored soy protein
1/4 cup brown sugar
1/4 cup margarine, melted
1 cup dried fruit (apples, apricots, cherries, pineapples, figs, mangoes)
1/2 cup dried cranberries
1/2 cup candied/glazed soy nuts

Directions

Combine oatmeal, cereal, soy protein, brown sugar and margarine in ungreased jelly roll pan, 15 1/2 x 10 1/2 x 1 inch. Mix thoroughly and spread evenly. Bake at 350 degrees for 10 minutes; stir. Bake an additional 10 minutes or until lightly brown; cool. Cut large dried fruit into pieces with kitchen scissors. Add cranberries and soy nuts to cooled granola. Store granola in a tightly covered container. Makes about 6 cups.
