Banana Wrapped Mahi Mahi

This recipe is an authentic Mexican dish that Chef H recently enjoyed while visiting this Mexican Colonial town.

Ingredients

Cilantro Pesto:
1 bunch of cilantro with leaves removed and stems discarded
1 cup of unsalted walnuts
2/3 cup of olive oil
1 small clove of sliced garlic

4-5 ounces Mahi Mahi or other meaty fish
Banana leaf (can be found in the frozen section of specialty markets and cost under $1.50 per package. Rinse thoroughly before using.)

Directions

Put all Pesto ingredients in a blender and process into a typical style pesto. Can be refrigerated and kept for several weeks in a closed container.

Wrap 4-5 ounces of Mahi Mahi or other meaty fish in a banana leaf after spreading a generous amount of Pesto on one side of the fish. You can use butchers string to help hold it togerther, if you prefer. It is just like wrapping a package.

The wrapped fish can be put on a hot grill or 5 minutes per side.

The wrapped fish can also be sauteed on the stove in a tablespoon of olive oil for about the same amount of time as above.

Serve with rice and slices of fresh Mango.
