Ingredients
8 oz. boneless skinless chicken breast
1/4 tsp. garlic powder
1/4 tsp. red pepper flakes
1 red bell pepper
1 tablespoon low sugar ketchup
1 tablespoon spicy brown mustard
2 tablespoons sugar free apricot jam
Directions
Dice chicken into bite size pieces and cook in a medium skillet with non-stick cooking spray, garlic powder, red bell pepper and red pepper flakes. In a small side bowl, mix together low sugar ketchup, spicy brown mustard and low sugar apricot jam. Add in the sauce and red peppers once the chicken is cooked and continue to heat for 5 minutes on medium/low heat. The sweet and sour chicken pairs well with brown rice or quinoa!
