Peachy Keen SPAM Toast

Ingredients

1 (12 oz) can Bacon SPAM, finely chopped, divided
8 oz cream cheese, softened
1 cup peaches, chopped
2/3 cup pus 1 teaspoon sugar, divided
1 1/2 teaspoon vanilla, divided
8-10 slices Texas Toast
1 egg
1 cup evaporated milk
1 teaspoon cinnamon

Directions

In a skillet, brown one cup of the chopped SPAM. Set aside for topping. Blend cream cheese, peaches, remaining SPAM, 2/3 cup sugar and 1 teaspoon vanilla. Slice the toast on the crust side to make a pocket. Fill the pocket with a tablespoon or two of the filling. In a bowl, whisk together the egg, evaporated milk, remaining sugar and vanilla. Dip prepared toast in egg mixture, coating both sides. In skillet, brown toast over medium heat until brown, flip and brown the other side. Top with reserved SPAM and serve with Cinnamon Cream Syrup.

Cinnamon Cream Syrup;
1 1/2 cups sugar
3/4 teaspoon cinnamon
2/3 cup water
1/2 cup evaporated milk

In a saucepan, combine the sugar, water and cinnamon. Bring to a boil over medium heat, stirring constantly. Stir for 1 minute. Cool and add evaporated milk, stirring constantly. Pour on top of SPAM Toast.
