1 can black beans, drained and rinsed
1 can black eyed peas, drained and rinsed
1 can shoepeg or white corn, drained and rinsed
1 can diced tomatoes (with onions and garlic), drained
1 can Rotel Mexican tomatoes (with lime and cilantro), drained
1 bunch green onions
1/2 each of yellow, red, and green peppers
1 cup Italian salad dressing.
Place drained beans, peas, corn and tomatoes in large bowl.
Chop the green onions and the peppers and add to the bowl.
Mix all with 1 cup of Italian dressing.
Serve with thick chips or scoops.
Keeps well in refrigerator.
