Atlantic Salmon with White Balsamic Vinegar Beurre Blanc - December 28, 2007

"Cooking with KAKE" - Recipe of the Week

Ingredients


  • 4 (6-8 oz. each) Salmon Fillets

  • Sprinkle Salt

  • Sprinkle Pepper

  • 2 TBSP Oil

Directions


  1. Pat Salmon Fillets with towel.

  2. Sprinkle salt and pepper over salmon.

  3. Rub each fillet with oil. Place oil side down in hot skillet. Cook 2-3 minutes on each side, or until internal temperature of 145 degrees F.


White Balsamic Vinegar Beurre Blanc

  • 1/2 Cup Yellow Onion, minced

  • 2 TBSP Fresh Garlic, minced

  • 12 oz. White Balsamic Vinegar

  • 5 Sticks Butter, cubed

  • Salt & Pepper to taste

  • Cilantro, minced to taste

  • 3 TBSP Olive Oil



  1. Over medium heat, cook onion and garlic 2 minutes, stir frequently.

  2. Add white balsamic vinegar. Allow to reduce by half.

  3. Add cold cubes of butter, 1 tablespoon at a time, stirring to incorporate.

  4. Add salt and pepper to taste.

  5. Stir in cilantro and spoon over fish.


Serves 4
