Herb Vinaigrette

www.kansassoybeans.org Soybeans belong to the legume family and are native to East Asia. Soybeans can be purchased as dry whole soybeans, canned yellow or black soybeans, and green (fresh or frozen) and shelled in the pod.

Ingredients

1/2 cup vegetable oil
1/4 cup red wine vinegar
1/4 cup hebs (rosemary, basil, chives, parsley, dill and/or thyme)
1/2 teaspoon minced garlic
1/2 teaspoon mustard
1/2 teaspoon honey
Salt and pepper to taste

Directions

Thoroughly blend all ingredients in blender or jar with tight fitting lid until smooth.

Makes 1 cup dressing.

1/2 cup yellow soybeans, cooked 14 grams soy protein
1/2 cup edamame soybeans, cooked 11 grams soy protein
1/2 cup black soybeans, cooked 9 grams soy protein
