1 pint Blueberries
1 pint Raspberries
5 each Sugar cookies (crumbled)
24 oz. Mascarpone Cheese (3 - 8 oz. containers)
1 Vanilla bean
5 oz Baileys Irish cream
3 oz. Coconut extract
4 sprigs Mint
Place all of the mascarpone cheese in a large mixing bowl. With a sharp knife cut the vanilla bean in half and scrape the seeds into the cheese and mix thoroughly. Split the cheese into 2 equal portions, mix the Baileys Irish Cream into one portion and Coconut extract into the other.
Layer the ingredients in 4 large glasses, cookies first, baileys cheese, berries, cookies, coconut cheese, berries, baileys cheese, then garnish with a mint sprig.
