Serve with grilled shrimp.
2 large ripe fresh tomatoes
1/4 cup red onion, minced
3 each green onions, sliced thin (green part only)
3 Tablespoons prepared horseradish
3 Tablespoons Cilantro, fresh, minced
2 teaspoons olive oil, extra-virgin
1 Tablespoon (or more!) Jalapeno pepper, minced
1 teaspoon (or more!) lemon juice
dash of Tabasco
dash of salt
dash of black pepper
Combine all ingredients in a bowl and mix.
Serve with grilled shrimp!
