Spicy Sea Bass with Ginger Marinated Mushrooms & Asparagus - November 16, 2007

"Cooking with KAKE" - Recipe of the Week

Ingredients

Mushrooms and Asparagus

  • 4 Oz. Ginger Sauce

  • 4 Tbs. Butter or Olive Oil

  • 2 Oz. Oyster Mushrooms

  • 2 Oz. Shitake Mushrooms

  • 2 Oz. Porcini Mushrooms

  • 8 Spears Asparagus (par boiled)

Directions


  1. Heat pan and oil to medium heat.

  2. Add mushrooms and asparagus.

  3. Season with salt and pepper.>/li>
  4. Cook for approximately 3-4 minutes, then add ginger sauce and cook 1-2 minutes. Reserve.


Sea Bass

  • 2 - 6 oz. Fillets with skin-on

  • Salt and Pepper to taste

  • Olive Oil


Method:

  1. Heat pan and oil over medium high heat.

  2. Season fish well on both sides.

  3. Place in pan skin side down and cook until opaque in center.

  4. To serve - Spoon mixture of mushrooms and asparagus in center of plate, place fish on tip. Garnish with tomato and fresh herbs.
