Ingredients

1 (7-1/4 ounce) box of macaroni and cheese dinner mix
2 eggs, beaten
Margarine
Milk
1 (12 ounce) cans SPAM Classic
1/2 cup onion, chopped
1/2 cup green pepper, diced
1 jar prepared pizza sauce
1 (4 ounce) can mushrroom stems and pieces, drained
1 cup shredded Mexican Cheese Blend

Directions

Prepare macaroni and cheese according to package directions. Gradually stir in beaten eggs. Spread macaroni and cheese mixture onto a large pizza pan and bake at 375 degrees for 10 minutes. Meanwhile, cube 1 can of SPAM. In a large skilled, lightly saute SPAM cubes, onion and green pepper. Stir in pasta sauce and mushrooms. Spread over macaroni crust Top with the other can of SPAM, shredded cheese blend, and a few thinly sliced pieces of SPAM (I cut out the letters S-P-A-M).
Bake 10 to 15 minutes until crust reaches 160 degrees and the cheese is melted.
