2 cups pancake mix
1 cup milk
1 cup vanilla yogurt
1 teaspoon lemon zest
1 cup fresh blueberries
Blueberry or maple syrup for drizzling
1. In a large bowl, combine pancake mix, milk, yogurt, eggs, and lemon zest; mix until well combined. Stir in blueberries.
2. Coat a griddle or skillet with cooking spray. When griddle is hot, pour on 1/4 cup batter per pancake. When bubbles form and edges begin to brown, flip pancakes and brown on other side. Repeat until all batter is used.
3. Serve immediately with syrup.
