Eat Right Recipe - Mixed Vegetable Frittata

Ingredients:

1 oz. diced red onion
1 oz. sliced mushroom
1 oz. diced tomato
1/4 oz. fresh clipped spinach
6 oz. egg beaters or egg substitute

Procedure:

Heat small amount of oil in skillet and saute vegetables until done and spinach wilts. Add egg beaters and cook until golden. Serve with 4 ounces of 2% cottage cheese. Serves 1.
