Orange And Soy Glazed Salmon

Ingredients:

6 oz. salmon filet, fresh
2 oz. soy sauce
1 T. brown sugar
1 T. orange marmalade
2 slices Valencia orange
2 slices red onion, about 1/8" thick
1 pinch sesame seeds
1 8x11 parchment paper

Procedure:

Soak the salmon in soy sauce for about 4 minutes (2 minutes each side). In the center of the parchment paper, place 1 onion slice and top with 1 orange slice. Place the marinated salmon on top of the onion and orange.

Spread the orange marmalade over the onion evenly, then sprinkle brown sugar on top of the marmalade.

Place an orange slice and an onion slice on top of the salmon, then fold the parchment paper over the salmon creating an airtight envelope.

Place in the oven on a sheet pan at 350 degrees. Cook 17 minutes for well done or 12 minutes for slightly rare (chef's preference).

Remove from the oven and allow the salmon to rest a few minutes, then remove from the parchment paper and enjoy!
