Ingredients:

24 chicken legs
2 qt. mojo marinade
24 slices bacon
1 qt. orange bourbon BBQ sauce

Procedure:

To make the chicken drumstick look like a lollypop is quite easy.

First, with a sharp knife, score the skin and meat around the bottom of the drumstick in a circular motion so you will be able to pull the meat and skin to the top or the thickest part of the drumstick exposing the bone.

After you have completed all of the chicken drumsticks, prepare the marinade and marinate the chicken for a minimum of 3 hours. While the chicken is marinating, you can prepare the orange bourbon BBQ sauce.

After the chicken has marinated wrap each lollipop with a piece of bacon. Start by placing the chicken lollipop meat-side down with the bone standing straight upward and start wrapping from the bottom, overlapping half the bacon each time around. Stop when you get to the exposed bone (you should be able to wrap the bacon around 3 times). Cook the lollipops at 350 degrees for 20 to 25 minutes and serve immediately with the dipping sauce.

Mojo Marinade

Ingredients:

2 cups orange juice (fresh Squeezed)
1 cup lime juice (fresh squeezed)
1 cup lemon Juice (fresh Squeezed)
2 cups vegetable oil
1/4 cup honey
2 jalapenos minced (fresh) more if you like it hotter
4 garlic cloves (minced)
2 T. paprika
1 T. cumin
1 T. coriander
1 T. red pepper flakes
1 bunch cilantro (chopped)
1 bunch mint (chopped)

Procedure:

Combine all ingredients together in a blender and puree for 30 seconds, then place marinade in a 1 gallon zip-lock baggie. Add whatever you want to marinade directly into the zip-lock baggie and refrigerate at least 3 hours, the longer the better.

Orange Bourbon BBQ Sauce

Ingredients:

24 oz. prepared BBQ sauce (your favorite kind)
12 oz. orange marmalade
4 oz. bourbon (your favorite kind)

Procedure:

In a saucepan, add orange marmalade and heat until it has melted. Next, add the bourbon and cook off the alcohol. (It will flame if your pan is hot enough). When the flame goes out, add your BBQ sauce and mix thoroughly and cook for about 5 minutes and remove from heat. Serve.
