Basil Chicken

Ingredients:
6 oz. chicken breast, butterfly cut
1/2 oz. salt
1 1/2 oz. Swiss cheese, sliced
2 basil leaves, fresh
1/2 oz. Prosciutto ham
1 oz. butter
1/2 oz. mushrooms, fresh, sliced
1 sprig rosemary, fresh
Procedure:
Butterfly cut the chicken breast and season with salt and pepper. Place the cheese, ham, mushrooms and basil on half of the chicken breast, fold the other half of the breast over the top, sandwiching the ingredients between the two halves. Place in the oven at 350 degrees F for 20 minutes or until chicken has reached 165 degrees F.
Serve chicken over your favorite rice or pasta. Drizzle the chicken with the Poulette Sauce and enjoy.
