Spinach & Bacon Cream Cheese Dip

Ingredients:
2 oz. garlic, chopped
8 oz. bacon, chopped fine
1 pound spinach, fresh, chopped
8 oz onion, minced
2 pounds cream cheese, softened
salt & pepper, to taste
Procedure:
Sauté bacon and onion in a sauce pot until onion starts to caramelize add the garlic and remove from the heat. Place cream cheese in a stock pot over low heat, stirring frequently. When the cream cheese has melted, add the spinach and continue to heat until spinach has cooked through. Add the sautéed bacon, onions and garlic to the cream cheese mixture. Add salt and pepper to taste.
Serve warm with toast points, tortilla chips, pita chips or potato skins.
