Does anybody feel like I do....that baking is one of the most relaxing things in the world?
Today is my Wedding Anniversary. I woke up with a million things to do.....(kids start school in two days). I made out a "to do" list last night and it was sitting on my counter when I got up. After I took one of my daughters to two doctors appointments, it was stime to start down the list.
But it was raining....and like I said to Jay last night...when it rains all day you HAVE to bake. So, I decided that I was going to treat myself and allow myself the luxury of just baking before I had to go to work. Once in awhile we have to just do what we feel like doing. As mothers, sometimes we feel guilty for doing things that help us relax. It's like if we do that, we are not a good mother or wife. Although I find it very hard to digest this, relaxing with things we like to do...actually makes us better mothers and wives.
So I let the butter soften and baked. I had some toffee chips and some baking chips in the pantry...so I just kind of revised a recipe and made chocolate-toffee bars. Then I baked the old standby....chocolate chip bars. My kids were surprised over what a good mood I was in ....and how "unstressed" the baking made me.
So, I brought half my baked goods into the newsroom...and said.."Will you help me celebrate my Anniversary by eating my baked goods?" Everyone oblidged....they are almost gone.
